I used the Pizza Casserole recipes from AllRecipes as a starting point for this Pizza Casserole. The ingredients listed below are doubled as I wanted some leftovers.
Ingredients:
- Pizza Sauce (double recipe)
- 16 oz rotini
- 1 lb ground beef
- 2 onions, chopped
- 4 cloves garlic, minced
- 2 cup sliced pepperoni
- 3 cups shredded mozzarella cheese
- 32 oz pizza sauce
Directions:
- Preheat oven to 350.
- Combine all sauce ingredients in a saucepan and simmer on medium low while preparing casserole.
- Cook rotini according to package directions and drain.
- Brown ground beef, onions and garlic.
- Drain and rinse
- Combine rotini, hamburger mixture, pepperoni, 1 cup of cheese, and sauce in a large bowl
- Spread in 9 x 13 inch pan and bake in 350 oven for 20 minutes
- Top with remaining cheese and bake an additional 10 minutes.
The finished product! I forg0t to take the picture until after dinner. But, as you can see we put a pretty good dent in it =)
Verdict: We all really liked this dinner and I will definitely make it again. I was very happy with the sauce and will use that as my go to for pizza sauce from now on. My family suggested more cheese be added to the casserole so I’ll add another cup next time I make it. My daughter didn’t like that some of the pepperoni slices “bunched” up, but the guys in the family really loved that. Cutting the pepperoni in half might solve that problem. The original recipe called for 1 chopped green bell pepper, which I didn’t have. I think that would be a great addition. I could also see using sausage or ground turkey instead of hamburger depending on what I have on hand.
Approximate Cost: $9.00 for two meals
